Along the way you will also come across some of the 100-odd species of bird that have been spotted in Văcărești – from wild ducks to herons. With luck, you might also see a turtle or fire-bellied toad – two protected species that have flourished in these untouched surroundings.

Food & Wine

Walachia and Oltenia Traditional Dishes

Main ingredients used to prepare Walachia / Oltenia traditional dishes are pork and mutton, fresh vegetables, milk and wheat. Some traditional dishes feature Greek and Turkish influences.

A typical, traditional meal, in Walachia/ Oltenia includes:
~ Zacuscă (vegetable dip obtained from greilled eggplant, grilled red peppers and onion, tomatoes cooked in a little bit of sunflower oil). Other popular appetizers include: cow’s milk white cheese (telemea) and fresh vegetables, beef ‘salad’ (beef or chicken, potato, carot, peas, pickles and mayonnaise), mushrooms, sauteed chicken livers and yellow cheese (cascaval) croquettes,
~ Ciorbă de Burtă (tripe soup – popular hangover remedy) or Ciorbă de Văcuţă cu Legume (beef and vegetable soup),
~ Mâncare de Mazăre cu Pui (peas and chicken stew ) or Limbă cu Măsline (beef or pork tongue with black olives) or Mâncare de Fasole Verde (green bean stew),
~ Plăcintă cu Griş si Stafide (semolina and raisins cake) or Prăjitură cu Gem de Prune (plum-jam crumb cake) or Albă ca Zapada (layer cake with lemon-butter cream).

Other Walachia / Oltenia culinary specialties include:
~ “Mititei” or Mici (grilled skinless sausage made from a mix of twice-ground pork and beef meat and mutton of beef fat/ tallow, beef bone stock and spices; a popular snack or main course.
Local lore has it that the Mititei were created by accident, in 1872, at "La Iordache" – a restaurant located in Bucharest Old Town. One evening the restaurant known for its delicious “Patricieni” sausage had run short of sausage-skin (mutton small-bowel). The cook decided to add a few more herbs and spices to the grinded meat and grill it without casing. The customers loved the skinless sausages and – because they were smaller than the usual “Patricieni” - named them “Mititei” ("the wee ones").
~ Ciorbă de Potroace (soup obtained from turkey or hen parts: back, gizzard, wings, heart, neck, rice, vegetables and sauerkraut juice),
~ Ciorbă de Perişoare (meatball soup),
~ Borş Oltenesc cu Praz (leek borsch),
~ Tocaniţă de ied picantă (spicy young goat stew),
~ Ciulama (chicken cooked in sour cream and flour sauce),
~ Tartă cu Praz şi Morcovi (leek and carrot tart),
~ Mâncare de Castraveţi Muraţi (pork meat and pickled baby-cucumbers stew),
~ Ghiveci (vegetables stew),
~ Prajitură cu Lapte Acru (sour-milk cake)
